Well, these little guys may be the ugliest cookies I’ve ever baked. First time for everything… right? Despite their looks, I promise that they’re actually delicious. Around 160 calories per cookie, full of healthy fats and dietary fiber — these guys make a perfect little snack to have on hand for any time of the day! Besides, a little chocolate for breakfast never hurt anybody… 😉

Ingredients
- 1 cup almond meal
- 1 cup rolled oats
- 2 bananas very ripe
- 1/3 cup peanut butter
- 1/4 cup dark chocolate chips
- dash cinnamon and sea salt
Instructions
- Start by preheating your oven to 375F degrees. Add all ingredients, besides the chocolate chips, into a food processor. Pulse for 2-3 minutes until combined.
- Place mixture into a large mixing bowl and roll in chocolate chips. Grease a baking sheet with nonstick spray and form 10, round(ish) cookies. Press down with your thumb. They’re not going to come out perfectly (as you can see…), so don’t worry about it.
- Bake for 10 minutes. It’s probably best to wait a few minutes until they’re cooled down, but I think they taste best straight outta the oven. Crispy on the outside, soft on the inside… delish! Enjoy!
