Am I the only one that thinks that cauliflower is the forgotten vegetable? In all honesty, I never really even liked them much. That is, until I learned how to cook them perfectly. This may not be the prettiest dish to date, buuuuut, it is delicious! Best part is, I guarantee you have all the ingredients sitting in your pantry already. Start adding more veggies into your life with this super easy and tasty roasted cauliflower — I’ll bet you’ll never go back to eating them any other way!
easy roasted cauliflower
Ingredients
- 1 whole cauliflower about 1.5-2lbs
- 2 tbsp olive oil
- 5 tbsp parmesan cheese
- juice of ½ lemon
- black pepper and salt, to taste
Instructions
- Start by preheating your oven to 400F degrees.
- Place your cauliflower florets into a large mixing bowl. Pour olive oil and lemon juice onto florets, sprinkle in parmesan cheese and thoroughly coat, tossing with your hands. Make sure that all of the cauliflower is covered in oil. Add in cracked black pepper and salt to taste.
- Spread evenly onto a baking sheet and place into oven for about 40 minutes, until tender. Allow the cauliflower to slightly brown.
- Add another sprinkle of parmesan cheese, and serve hot!
