chocolate coconut energy bites

Ingredients

  • 1 cup rolled oats
  • 8-10 pitted dates softened
  • 1/2 cup almond butter
  • 1/3 cup unsweetened coconut flakes
  • 3 tbsp cocoa powder
  • 2 tbsp coconut oil

Instructions

  • Throw all ingredients in a food processor. Process for 3-5 minutes until all ingredients are thoroughly combined. The dates can take a little longer to break down, so make sure they get chopped up pretty finely.
  • Taste the mixture and adjust sweetness to your liking. You could also add in honey or maple syrup. Make 8 to 10 medium-sized balls with your hands. Refrigerate for 5-10 minutes before serving for best results.
