Start by preheating your oven to 450F degrees. Scrub sweet potatoes and thoroughly pat down to dry. Cut into cubes or wedges. For evenly cooked sweet potatoes, be sure to cut pieces into equal sizes.
Add cubed sweet potatoes onto a lined baking sheet.
Drizzle olive oil, salt and za'atar seasoning over sweet potatoes. Mix well to combine. Ensure that all of the potatoes are coated with oil.
Place sweet potatoes into the oven and cook for 30-35 minutes, or until they are tender and golden. Be sure to toss the potatoes halfway through the cook time.
While the sweet potatoes are roasting, make your tahini sauce. Combine tahini, olive oil, salt, minced garlic, grated ginger and apple cider vinegar into a bowl. Mix together. Add a small amount of water to thin the sauce, using more as needed.
When sweet potatoes are fully cooked, place into a bowl and drizzle tahini sauce over the top. Garnish with fresh parsley. Serve immediately and enjoy!
