One of my favorite lunches and probably one of the easiest and simplest recipes to date! Fresh mozzarella, creamy avocado and tomato finished with drizzled balsamic glaze give these quesadillas a delicious and unique flavor combo that’s perfect for summertime!
avocado caprese queadillas
Servings 1 quesadilla
Ingredients
- 1 whole wheat flour tortilla
- 1/2 tsp olive oil
- 3 oz. fresh mozzarella
- 1/2 hass avocado very ripe
- 1/4 cup cherry tomatoes sliced
- black pepper to taste
- 1 tbsp balsamic glaze to drizzle on top!
Instructions
- Begin by placing a large skill on medium heat. Add a tiny bit (about 1/2 teaspoon) of olive oil to one side of tortilla with a brush, making sure entire area is covered. Place tortilla oil side down on the skillet and allow to brown for about 2-3 minutes.
- Add mozzarella layer first, then avocado and tomato to cover one side of tortilla and allow to melt for about 2 minutes. Add fresh cracked black pepper if desired. Flip other half of tortilla over and press down. Allow tortilla to crisp and cheese to melt more for a few minutes. When cheese has melted and tortilla is crisp, remove from skillet and cut into three triangles with a pizza cutter.
- Drizzle on balsamic glaze and serve hot!
