This salsa, y’all. It’s love at first bite.
It’s basically already summer down here in Florida (…when does it not feel like summer???), and salsa is always the first thing I crave during the onset of these sweltering months. I like any type of salsa. I like salsa on omelettes, atop grilled fish, with chips… by the spoonful. You get the picture. This salsa is perfectly sweet, perfectly spicy and pairs beautifully with just about anything. Kick start your summer early with this refreshing combo of pineapple and mango goodness!
sweet and spicy pineapple salsa
Ingredients
- 1 large tomato diced
- 1 large mango diced (make sure it's ripe!)
- 1/2 cup pineapple diced
- 1 jalapeno finely diced and seeded (keep the seeds if you want it extra spicy)
- 1/2 small red onion finely diced
- 1 tsp honey
- dash cayenne pepper
- juice of ½ lime
- salt, to taste
- 1/4 cup cilantro chopped, plus more for garnish
Instructions
- Chop the tomato, mango and pineapple into fairly small, square chunks. Add to a large mixing bowl.
- Finely dice the jalapeno and red onion and add to the bowl. Mix together, adding in salt, lime juice, cayenne, honey, sea salt and chopped cilantro.
- Incorporate ingredients together thoroughly and serve with tortilla chips, atop grilled fish/chicken/pork, etc. This salsa is versatile and can be used for many different purposes… so go ahead and get creative… happy (early) summer!
