Chocolate-y, coconut-y, free of refined sugars and the perfect little on-the-go snack packed with healthy fats and fiber. I love any type of no-bake bite (mostly because I am not a fan of baking,) but I especially love that these guys are ready in less than five minutes. And all you have to do is throw in a food processor. TOO EASY. Having these on hand ensures that you have access to a quick snack at all times. With all the garbage thrown into protein bars on the market today, this is a homemade treat that you can feel good about eating!
Add in mini dark chocolate chips, roll in shredded coconut, cocoa powder, chopped nuts… either way, these little beauties are delicious!
chocolate coconut energy bites
Ingredients
- 1 cup rolled oats
- 8-10 pitted dates softened
- 1/2 cup almond butter
- 1/3 cup unsweetened coconut flakes
- 3 tbsp cocoa powder
- 2 tbsp coconut oil
Instructions
- Throw all ingredients in a food processor. Process for 3-5 minutes until all ingredients are thoroughly combined. The dates can take a little longer to break down, so make sure they get chopped up pretty finely.
- Taste the mixture and adjust sweetness to your liking. You could also add in honey or maple syrup. Make 8 to 10 medium-sized balls with your hands. Refrigerate for 5-10 minutes before serving for best results.
