Okay. So the truth is, I didn’t actually turn an avocado into chocolate. I did, however, create a lightened up, decadent chocolate truffle using an avocado in replace of heavy cream, butter and other added sugars. I can only use one word to describe the result… and that is: sinful.
Avocado works as a great substitute because it doesn’t really have much of a taste, but it has the perfect creamy consistency to make a super dense truffle. If you have a sweet tooth and just want a little bite of something, these truffles are the perfect treat!
dark chocolate avocado truffles
Servings 12 truffles
Ingredients
- 6 ounces good quality dark chocolate
- 1/2 tsp vanilla extract
- 1 medium hass avocado ripened
- 1/4 cup cocoa powder
Instructions
- begin by chopping the chocolate into bite-sized pieces and place into a microwave-safe bowl. put the chocolate in the microwave for 30 seconds, and then stir. place back into the microwave until chocolate is completely melted.
- scoop the avocado into the bowl and mix chocolate and avocado together. add 1/2 teaspoon of vanilla extract. to ensure an even consistency with no chunks, i suggest using a food processor or a hand mixer to fully incorporate the two ingredients. when the mixture is smooth and fully combined, cover with plastic wrap and place in the refrigerator for 20-30 minutes, until chocolate has set.
- use a spoon to scoop out truffle mixture and form one-inch diameter balls. roll in cocoa powder, cinnamon, chopped nuts, coconut, or anything else you’d like, and enjoy!
