Maple Roasted Carrots with Pomegranate Herb Relish

Ingredients
Maple Roasted Carrots
- 1 lb rainbow carrots
- 1 tbsp olive oil
- 1 tbsp maple syrup
Pomegranate Herb Relish
- 1/2 cup fresh mint
- 1/2 cup fresh parsley
- 1/2 cup pomegranate seeds
- 1 squeeze fresh lemon juice
Instructions
- Preheat your oven to 400F degrees.
- Wash carrots and peel. Place on a lined baking sheet. Mix together olive oil and maple syrup in a small bowl. Using a pastry brush, coat the carrots evenly with the oil and syrup mixture.
- Place carrots in the oven for 20 minutes.
- While the carrots are roasting, make the pomegranate herb relish. Place the parsley and mint in a food processor and pulse. Add a drizzle of olive oil. Place herbs in a small bowl and squeeze lemon juice, mix to incorporate. Finally, add the pomegranate seeds.
- After 20 minutes, toss the carrots to ensure even cooking. Place back in the oven for another 15 minutes, or until carrots are tender and caramelized.
- Transfer carrots to a serving platter and sprinkle with salt. Serve carrots warm with pomegranate herb relish as garnish.
