Maple Roasted Carrots with Pomegranate Herb Relish

Ingredients

Maple Roasted Carrots

  • 1 lb rainbow carrots
  • 1 tbsp olive oil
  • 1 tbsp maple syrup

Pomegranate Herb Relish

  • 1/2 cup fresh mint
  • 1/2 cup fresh parsley
  • 1/2 cup pomegranate seeds
  • 1 squeeze fresh lemon juice

Instructions

  • Preheat your oven to 400F degrees.
  • Wash carrots and peel. Place on a lined baking sheet. Mix together olive oil and maple syrup in a small bowl. Using a pastry brush, coat the carrots evenly with the oil and syrup mixture.
  • Place carrots in the oven for 20 minutes.
  • While the carrots are roasting, make the pomegranate herb relish. Place the parsley and mint in a food processor and pulse. Add a drizzle of olive oil. Place herbs in a small bowl and squeeze lemon juice, mix to incorporate. Finally, add the pomegranate seeds.
  • After 20 minutes, toss the carrots to ensure even cooking. Place back in the oven for another 15 minutes, or until carrots are tender and caramelized.
  • Transfer carrots to a serving platter and sprinkle with salt. Serve carrots warm with pomegranate herb relish as garnish.
