Preheat your oven to 400F degrees.
Wash carrots and peel. Place on a lined baking sheet. Mix together olive oil and maple syrup in a small bowl. Using a pastry brush, coat the carrots evenly with the oil and syrup mixture.
Place carrots in the oven for 20 minutes.
While the carrots are roasting, make the pomegranate herb relish. Place the parsley and mint in a food processor and pulse. Add a drizzle of olive oil. Place herbs in a small bowl and squeeze lemon juice, mix to incorporate. Finally, add the pomegranate seeds.
After 20 minutes, toss the carrots to ensure even cooking. Place back in the oven for another 15 minutes, or until carrots are tender and caramelized.
Transfer carrots to a serving platter and sprinkle with salt. Serve carrots warm with pomegranate herb relish as garnish.
